Sweet Potato Fries


Sweet Potato Fries

2 medium sweet potatoes (800g), washed and sliced into fries

1 tbsp olive or coconut oil

Sea salt & black pepper

Tahini Lime Mayo

1/4 cup tahini

1 tbsp extra virgin olive oil

2 limes, juice of one and a half (3 tbsp), reserve remaining half as garnish

Sea salt & black pepper

Garnish with fresh coriander/cilantro, lime wedge, chili flakes and sesame seeds


1. Preheat oven to 200C | 400F.

2. In a large bowl combine sweet potato fries, oil, salt & pepper. Stir to coat well. 

3. Lay fries on a lined baking sheet and place in the oven for 30 - 40 minutes. Flip fries as they become browned.

4. Meanwhile, combine tahini, olive oil and juice from one and a half limes. Stir to combine well. Add a little water if you prefer a thinner consistency. Season with salt and pepper.

5. Serve sweet potato fries and tahini lime mayo with with fresh coriander/cilantro, lime wedges, chili flakes and sesame seeds.
