Blueberry crumble with RED currants & fresh mint
4 cups / 500 g blueberries
1/2 tsp vanilla extract
1 tbsp honey
2 cups rolled oats
pinch of salt
1/2 tsp vanilla extra
5 tbsp honey
60 g organic butter or 4 tbsp coconut oil
Red currants or other berries
Ice cream or greek yogurt
1. Preheat oven to 175 C | 350 F. Rinse berries and combine in a mixing bowl with vanilla extract and honey. Pour into a baking dish.
2. Combine oats, vanilla extract, honey and butter into a mixing bowl. Use your hands to combine well. Layer oat mixture on top of berries in the baking dish.
3. Bake for 35 - 40 minutes until berries are bubbling and oats are browned. Top with red currants or other berries, fresh mint and serve with ice cream or greek yogurt.
