The sun is shining in Stockholm, our sailboat is in the water, the veggie patch at our community garden plot has been planted AND we've got tons of fresh herbs growing on our balcony in the new apartment... we're ready for summer in Sweden! Matt has done most of the hard work involved (that's why I keep him around!), but I do make sure we have plenty of delicious food on hand ;)
Healthy snacks are essential around here, as they probably are for you too! These Cacao & Goji Energy Balls have been a huge hit. The dates add tons of sweetness (just don't go overboard, even though they are natural, they are still high in sugar!), perfect for when you need a little pick-me-up or afternoon treat. You'll also find a few refined sugar free dessert suggestions below, as that is one of the toughest things about avoiding refined sugar. Now that we have tons of fresh fruit coming our way, a simple berry crumble with a little honey instead of white sugar makes a super delicious dessert! Check out the suggestions below.
CACAO & GOJI ENERGY BALLS
This delicious, refined sugar-free snack is slightly adapted from Joyous Health's Sexy Maca Balls.
Makes 15 balls
8 to 10 soft Medjool dates, pitted
1/2 cup raw almonds (I mixed almonds & hazelnuts)
1/4 cup goji berries
1/4 cup raw cacao nibs
2 tsp cinnamon
1 tbsp raw cacao powder
1 tsp pure vanilla extract
1. Place all ingredients in your food processor and process until combined. If the mixture is having trouble coming together, add a little water (1 tsp at a time) and continue processing.
2. Roll mixture into balls and place in the refrigerator for a few hours to set.
3. Enjoy one or two as a snack or dessert!

Zucchini Cupcakes by Green Kitchen Stories - I've made this as a bundt cake instead of cupcakes a couple of times and it's always delicious. Sometimes I add some chopped dark chocolate (80% cacao content) to the batter.
Soft Raspberry Ice Cream by Therese Elgquist - served with whipped coconut cream and hazelnuts! Sounds delicious for that summer heat.
Classic Chocolate Cake by Green Kitchen Stories - Okay this one does have chocolate in it, but choose a dark chocolate with atleast 80% cacao content to get as little added sugar as possible. It was really delicious topped with fresh raspberries.
