Guess what...? Soup season is officially on it's way out, and salad season is about to make it's big yearly comeback... BECAUSE IT'S SPRING! (for us up here in the northern hemisphere at least). But wait... when I say salad season, I mean big, hearty, nutritious, filling buddha bowl salads. This is one of the best ways to pack in tons of nutrient-dense foods, support resilient & balanced hormones (especially for us ladies!), improve your digestion and enjoy so many delicious flavours. Having a lunch like this will also do wonders to help you kick that sugar habit as it balances your blood sugar and energy levels. And we all know that the sugar habit is all kinds of trouble leading to weight gain, period problems, skin issues and even depression.
So in order to help you get on the buddha-bowl-spring-salad-train, I thought it would be useful to explain how you make a great one. A nutritionally balanced buddha bowl. It's very easy: take one or two items from each of the categories below and throw them together in a bowl (or neatly place them for insta-photos, of course). You should also aim for at least three different colours going on in your bowl ie. green, orange & purple, because you want a variety of micronutrients and all those amazing antioxidants that are so important for keeping you healthy & feeling fresh.
spinach, swiss chard, kale, rocket/arugula
carrots, red cabbage, red & yellow pepper, tomatoes, cucumber, green beans, broccoli, cauliflower, asparagus, brussels sprouts, beetroot, sprouts
hemp seeds, pumpkin seeds, walnuts, avocado, good quality olive oil, coconut oil, flax seed oil, wild caught salmon
SLOW CARBS (GOOD CARBS!)
sweet potato, squash, pumpkin, parsnip, quinoa, brown rice
PLANT & ANIMAL PROTEIN
hummus, hemp seeds, quinoa, black beans, chickpeas, lentils, tofu, feta cheese, goat's cheese, plain greek yogurt, eggs, wild caught salmon, organic chicken, beef and lamb
TASTY & NUTRITIOUS EXTRAS
lemon and lime juice, fresh herbs like mint, basil or coriander/cilantro, sauerkraut, kimchi, ginger, garlic, chilli flakes
